Creamy Zucchini Pasta (One Pan)
This creamy zucchini pasta is my favourite kind of dinner, the sort where the sauce and the pasta cook together in one pan and you barely have to think about it. Soft zucchini and tomatoes get mashed into a silky sauce, the pasta cooks right in it soaking up all that flavour, and a big handful of spinach goes in at the end. No cream, no draining, and a whole lot of veg hiding in a bowl that just tastes like comforting creamy pasta.
I make this on the busy nights when I want something cosy but cannot be bothered with a sink full of pots.

Why This Creamy Zucchini Pasta Works
- The zucchini turns into the sauce. Steamed soft and mashed down with the tomatoes, zucchini melts into a creamy base with no blender and no cream. It is the little trick that makes this feel rich while sneaking in a whole extra vegetable.
- One pan, no draining. The pasta cooks right in the sauce and soaks up all that flavour, which saves you a pot, a colander, and a good chunk of the washing up.
- Creamy with no cream. There is no cashew soaking or plant cream here. The body comes from the soft zucchini and tomatoes broken down together, so it stays light but still clings to every strand.
- It is packed with veg. Between the zucchini, the tomatoes, and the spinach stirred through at the end, there is a lot of goodness in here, but it eats like a proper bowl of creamy comfort pasta.

Swaps and Variations
- Use any pasta you have. Nests hold together best in a one pan cook, but any short or long shape works. Just keep an eye on the liquid and add a splash more if the pan drinks it up.
- Make it gluten free. I use gluten free tagliatelle nests, but regular pasta cooks exactly the same way if you are not avoiding gluten.
- Add some protein. A can of drained white beans or chickpeas stirred in at the end makes it more filling, and crumbled tofu works too.
- Switch up the greens. No spinach? Kale, chard, or a handful of rocket all wilt in nicely right at the end.
How To Serve It
This creamy zucchini pasta is lovely just as it is, with a good shower of vegan parmesan and a pinch of chili flakes. Creamy Zucchini Pasta (One Pan)

Method
- Soften the base. Warm the olive oil in a large deep pan over medium heat. Add the zucchini, tomato halves, and garlic, then cover and let them steam down for 10 to 12 minutes until completely soft.
- Mash it smooth. Uncover and mash everything with a potato masher until you have a loose, chunky sauce. The zucchini melts in and gives the sauce its body.
- Build the flavour. Stir in the tomato paste and the full seasoning mix. Let it cook for 1 minute so the spices bloom.
- Add the pasta. Nestle in the pasta and pour over the water, starting with 2 cups. Cover and cook for 8 to 10 minutes, stirring and checking every couple of minutes so nothing sticks.
- Cook to al dente. Keep going until the pasta is tender with a slight bite and the sauce has thickened and clings to the strands. Add the extra 1/2 cup water only if it tightens too fast.
- Finish with greens. Fold in the spinach and stir until just wilted, about 1 minute.
- Serve. Plate up, shower with vegan parmesan, and finish with a pinch of chili flakes if you like heat.
