1. In a large mixing bowl, add flour and create a well in the center. Place the yeast and sugar in the well, then pour lukewarm water on top. Let it sit for 5 minutes.
2. Add salt and mix the ingredients. Knead until the dough becomes smooth and elastic, adding a bit more water if needed.
3. Cover the bowl with a cloth or plastic wrap and let the dough rest for 30 minutes.
4. Divide the dough into 2 equal portions and cover them again. Let them rest for 15 minutes.
5. Roll out one dough ball thinly. Brush generously with olive oil or melted vegan butter. Fold the two sides to the middle, brush again with oil, and then fold it into an envelope shape. Refrigerate for 30 minutes.
6. Roll out the chilled dough into a large square. Spread pizza sauce evenly and add the chosen toppings.
7. Roll the dough into a log and slice it into even pieces.
8. Place the pieces on a baking tray lined with parchment paper. Press them slightly with your hands and brush the tops of the rolls with more oil or butter. Bake at 180°C (fan-assisted, no preheating) for 35 minutes or until golden brown.
