These golden, crunchy zucchini rings paired with a refreshing creamy zucchini dip are the ultimate vegan appetizer or snack. Made with simple pantry spices and whole ingredients, they’re light, flavorful, and a clever zero-waste way to use every part of your zucchinis.
Cut the rings- Preheat oven or air fryer to 400°F (200°C).- Slice zucchini into thick rounds. Use a corer or bottle cap to remove the centers, creating ring shapes. Save the centers for the dip.
Coat for crispiness- In a large bowl, toss the zucchini rings with olive oil, seasonings, vegan parmesan, cornstarch, and bread crumbs until well coated.- (Best method: mix olive oil directly in the bowl so the coating sticks evenly. If you skip this, spray the rings with oil once they’re on the tray instead.)
Bake or air fry- Arrange the coated rings on a parchment-lined tray or in an air fryer basket.- Cook for 20–25 minutes, flipping once, until golden and crunchy.
