This was very good! The gnocchi was nice and crispy. I didn’t have canned lentils so I cooked from dried – simmered with bay leaves, thyme, garlic and onion powder. The zucchini got a bit mushy – I might add it later next time, but the peppers, tomatoes and onion were perfect. I also added several handfuls of spinach when I tossed it halfway. The chili crisp oil is a great add. Very easy and tasty – will do again.
