Crispy Chickpeas with Tahini and Sesame
Crispy chickpeas get their toasty crust from tahini, sesame seeds and a spoonful of seasoning. Save the little browned crumbs on the parchment. They’re especially good scattered over a bowl of soup.
Start with a can of chickpeas and give them a good rub with a towel. Once they’re dry, the coating clings in a thin layer and the oven does the rest.
Why It Works
- Seasoning that sticks. A thin layer of tahini holds the spices and seeds against each chickpea as it rolls around the pan.
- Room to roast. A single layer gives steam somewhere to go. The edges brown more evenly when you roll the chickpeas over partway through.
How to Make It
Dry the chickpeas well, then mix, coat and roast. The recipe card has the amounts and oven timing.

Tips for a Crisp Coating
- If the towel leaves a wet patch when you press a handful, move the chickpeas to a dry corner and pat again.
- Lift one from the middle of the tray and let it cool briefly before tasting. The center often takes longer than the edges.
- White sesame seeds make a handy color cue. When they turn golden, taste a chickpea.
Swaps and Variations
Smoked paprika and garlic powder make a smoky batch. You can swap them for your favorite seasoning blend. If the blend already contains salt, leave the extra salt out and taste after roasting. White sesame seeds work on their own if that’s what you have.
How to Serve Them
Serve them warm in a small bowl, or sprinkle them over roasted green vegetable soup just before the first spoonful. For a snack plate, spoon a little roasted garlic dip onto a plate and scatter the chickpeas and toasted crumbs over the top.
Frequently Asked Questions
Can I start with dried chickpeas?
Yes. Cook them until tender first, then drain and dry them. Measure the chickpeas after cooking.
Do I have to peel every chickpea?
A rub with a towel loosens a few skins. Pick those out and leave the rest. Drying the surface matters more here than peeling the whole batch.
Why did my tahini turn into a thick paste?
The oil can settle at the top of the jar. Stir all the way to the bottom before measuring. If the seasoned paste feels too stiff to toss, work in a few drops of water at a time.
Why are my chickpeas browned but still soft?
Taste one after it cools briefly. If the coating is already dark but the middle is wetter than you like, turn the oven down to 350°F (175°C) and check every few minutes. Separate any clusters so the steam can escape.
Can I double the recipe?
Yes. Divide a double batch between two pans and switch their positions halfway through. For a triple batch, bake in batches if the pans would crowd the oven.
Can I make them without sesame?
Skip both the tahini and the sesame seeds. Toss the dried chickpeas with a little olive oil and salt, roast, then add the ground spices while the chickpeas are still warm.
Storage and Reheating
The coating is crispest the day you roast it. Refrigerate leftovers within 2 hours and use within 3 days. To bring back the crunch, spread the chickpeas on a tray and warm at 350°F (175°C) until hot and crisp, checking after 5 minutes. Keep them separate from soup or dressing until serving.

Method
- Dry the chickpeas. Heat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment. Drain and rinse the chickpeas, then roll them gently on a clean towel until their surfaces feel dry. Pick out any skins that come away.
- Mix the coating. Stir the tahini in its jar, then measure it into a small bowl. Mix in the sesame seeds, smoked paprika, garlic powder and salt. The coating should fall slowly from a spoon. If it stands in a stiff lump, stir in the water a few drops at a time.
- Coat and spread. Fold the coating through the chickpeas in a wide bowl until each has a thin coat. Spread them across the sheet in a single layer. Separate any clusters. Just before baking, drizzle the chickpeas lightly with olive oil or give them a light spray of olive oil.
- Roast and cool. Roast for 20 to 30 minutes, rolling the chickpeas over halfway through. Start checking at 20 minutes. When the coating looks dry and the seeds are golden, cool a few on a spoon and taste. If they still feel soft, roast another few minutes, checking often. Let the batch cool on the sheet for about 5 minutes before serving.

Notes
- Can size. A 15 oz can usually gives about 1½ cups (240 g) of drained chickpeas. Measure the beans after draining.
- Choosing tahini. Use a smooth, pourable tahini. A dense layer of paste takes longer to dry and can brown before the chickpeas crisp.
- Nutrition. About 160 calories per serving, based on one quarter of the batch with the measured olive oil. Brands and the amount left on the pan will vary.
