Spicy Oven Baked Bata Harra Fries with Garlic and Chili

You are going to love these fries. They are crispy on the outside and tender on the inside, and coated in a warm garlicky chili sauce that smells unreal. It is my fries version of Batata Harra, which is a classic Middle Eastern potato dish. Instead of potato cubes, we go full fry mode to make them fun, snackable, and seriously addictive. The cool sour cream or yogurt on top finishes it perfectly.

This recipe is super easy, budget friendly, and totally packed with flavor. Honestly, once you make fries this way, it is hard to enjoy normal fries again.

You can make Bata Harra style fries in several ways:

Double frying gives the crispiest result and follows the traditional Lebanese approach, though it uses more oil.

Boil then fry keeps the potatoes tender inside and reduces some oil absorption, but still involves frying.

Roast then toss is lighter and simpler, using oven heat for crispiness without deep frying. This is the method used here.

Air frying is another option that uses very little oil and delivers a great crisp, although it may require cooking in batches.


How to make Bata Harra Style Fries

Bake the Fries: Toss the potatoes with olive oil, salt, and pepper. Spread them out in a single layer and bake until crisp and golden.
Start the Flavor: Cook garlic and tomato paste in vegan butter and olive oil until the color deepens and it smells amazing.
Build the Heat: Add chili flakes, smoked paprika, onion powder, a little salt, and fresh parsley to bring that Bata Harra flavor to life.
Coat and Toss: Pour the sauce over the hot fries and gently mix until every fry is coated in that glossy chili garlic sauce.
Finish and Serve: Add a generous spoon of vegan sour cream or thick yogurt on top. A sprinkle of parsley makes them look and taste even better.

Cut evenly so the fries cook at the same rate.

Use a single layer on the tray to avoid steaming.

Let the tomato paste cook long enough to deepen in color before adding spices.

Taste the sauce before tossing and adjust salt or heat if needed.

If making for guests keep the fries baked and crisp on the side, and toss with the sauce just before serving.

Make the chili garlic butter

  • Heat vegan butter and olive oil.
  • Add garlic and tomato paste and cook until the paste deepens in color.
  • Add a bit of salt, then stir in chili flakes, smoked paprika, onion powder, and parsley.

Coat the fries

  • Pour the warm sauce over the fries and toss until fully coated.
  • Optional: return to the oven for 5–10 minutes.
