Bhaji Mixture

In a bowl, combine sliced onions, chopped coriander, chopped green chili, salt, ground cumin, ground coriander, ground turmeric, chickpea flour, and water.

Ingredients
  

For the Chutney Sauce:

  • 1 cup coriander leaves
  • 1/2 cup mint leaves
  • 1 green chili
  • 1 clove garlic
  • 1- inch piece ginger
  • Juice of 1 lemon
  • 1/2 tsp ground cumin
  • Salt to taste
  • 1/2 cup vegan yogurt optional

Instructions
 

  • Prepare the Bhaji Mixture: In a bowl, combine the sliced onions, chopped coriander, chopped green chili, salt, ground cumin, ground coriander, ground turmeric, chickpea flour, and water. Mix well to form a thick batter.
  • Fry the Bhajis: Heat oil in a frying pan. Drop spoonfuls of the bhaji mixture into the hot oil and fry until they turn golden brown.
  • Make the Chutney Sauce: In a blender, combine the coriander leaves, mint leaves, green chili, garlic, ginger, lemon juice, ground cumin, salt, and optional vegan yogurt. Blend until smooth.
  • Serve: Serve the hot Onion Bhajis with the freshly made chutney sauce.

Notes

You can adjust the level of spiciness by adding more or less green chili.
If vegan yogurt is not available for the chutney, you can omit it for a more tangy sauce.
Use fresh herbs for the chutney for the best flavor.
