  • Prepare Onions: In a large pot, heat the olive oil and vegan butter over medium heat. Add the onions, sugar, and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are caramelized.
  • Add Herbs and Garlic: Stir in the garlic, thyme, and bay leaves. Cook for an additional 2-3 minutes.
  • Thicken Soup: Sprinkle the flour over the onions and stir well to combine. Cook for another 2-3 minutes.
  • Prepare Broth: Add the vegetable broth cubes, water, and Worcestershire sauce to the pot. Stir well and bring the mixture to a boil. Reduce heat and let it simmer for 10-15 minutes.
  • Season: Remove the bay leaves and season with salt and pepper according to your preference.
  • Assemble and Bake: Preheat the oven to 400°F (200°C). Ladle the soup into oven-safe bowls, top with toasted baguette slices and sprinkle shredded vegan cheese over the bread. Place the bowls on a baking sheet and bake for 5-7 minutes or until the cheese is melted and bubbly.

Notes
