  • Prepare Baking Dish: Lay the spinach leaves at the bottom of a baking dish. Scatter cherry tomatoes on top. Slice the top off the garlic bulb to expose the cloves and place it in the dish. Add dollops of cream cheese around the tomatoes and garlic.
  • Season and Bake: Drizzle everything with olive oil, season with salt & black pepper. Bake for about 30-40 minutes, until the tomatoes are blistered and the garlic is soft.
  • Cook Pasta: While the tomatoes and garlic are baking, cook your pasta according to package instructions until al dente. Drain, reserving some of the pasta water.
  • Create Sauce: After baking, squeeze the roasted garlic out of its skin, and smash it into the tomato and cheese mixture. Smash the tomatoes and mix it with the garlic and cream cheese

    The dish is tasty and very versatile however roasting spinach leaves for 40 minutes will result in crispy, burnt mess, rather than green wilted goodness.
    I would suggest adding the spinach towards the end of roasting the tomatoes and garlic or simply wilting them in the pan with boiling pasta and then mixing everything together.

    This is awesome. My husband does not eat pasta but loved this with meatballs (we are not vegan) and commented that the sauce is pretty much a meal on its own. My garlic did not get soft, so I have to figure that out but even with that it’s was yummy

    Great dish, but I didn’t find the cook times to be accurate. The garlic took a lot longer and it was too long for the spinach. I started the garlic well in advance, then added the tomatoes and “cream cheese” per the recipe time, added the spinach at the end. Will make again!

  4. This was so easy and delicious! I think I would also put the garlic in first for 10-15 minutes then add the other ingredients!
