Simply amazing as a summertime dish! I had all of the ingredients fresh on hand from the garden aside from cashews and agave; which I substituted with peanuts and homemade date syrup. I also had a half of a red onion needing used so I finely minced and added it to the mix. This is a banger for sure and I will 100% make this again and again! The entire family (that detest cabbage) loved it.
This is delish. My only complaint is that the agave made it way too sweet for my taste. Needed to add lime juice and extra basil, avocado, spinach and salt to make it how I like it. This will go on the rotation, but sans agave.
