- Cook the cauliflower & peppers:– Oven: Place cauliflower steaks and whole bell peppers on parchment-lined trays. Roast for 25–30 minutes, flipping cauliflower once, until steaks are golden and peppers are blistered.– Air Fryer: Arrange cauliflower steaks and bell peppers in the basket together (if space allows). Cook for 20–25 minutes at 200°C, flipping the steaks halfway. The cauliflower should be golden and tender, and the peppers soft and charred.
- Peel the peppers once cooled, then discard skins.
- Make the roasted red pepper sauce:– Blend roasted peppers with walnuts, lemon juice, vegan parmesan, salt & pepper.– Add water gradually until smooth and creamy. Adjust seasoning.

Very very good – I made a few minor modifications: I didn’t make the chimichurri (ran out of time). I added 1 clove of garlic and 1/2 habanero pepper to the red pepper sauce. I used a few red roasting peppers along with 1 red bell pepper in the sauce. I also added a few TBS pumpkin seeds and a few TBS hemp seeds to the sauce, along with the walnuts, for more nutrients. I used my Nutribullet, which was perfect to get the sauce super smooth.
I actually put the peppers in the oven to roast first, while it was pre-heating before I sliced the cauliflower, so they would be ready and able to cool down for the sauce by the time the cauliflower came out since I wanted to eat the dish hot.
I used the convection roast setting in my oven which worked perfectly for the peppers and the cauliflower.
I made both the steaks and I also roasted some smaller broken cauliflower pieces and it was all delish. Next time I’ll add the chimichurri!
