2. Add the Mix-ins: To the batter, add the corn, green onions, minced garlic, ground coriander, turmeric, salt, and pepper. Stir until all components are well-coated and evenly distributed.

3. Fry the Fritters: Heat the oil in a frying pan over medium heat. Once hot, spoon dollops of the batter into the oil, flattening them slightly. Fry each side until golden brown, about 3-4 minutes, then transfer to a paper towel-lined plate.

4. Serve and Enjoy: Serve the corn fritters hot alongside your chosen dipping sauces for a delightful taste experience.

Expert Tips

  • Batter Consistency: The perfect batter should be thick enough to hold the ingredients together but not so thick that it doesn’t drop off a spoon easily.
  • Cooking in Batches: Don’t overcrowd the pan to ensure each fritter cooks evenly and becomes nicely crispy.
  • Corn Varieties: Fresh corn is ideal during the summer months, but frozen or canned corn can also produce excellent results.

I added baking powder and baking soda after the first batch didn’t bubble on top. Once I added BP and BS the next batch turned purple! The first batch stayed yellow and were brick like. Once BP and BS added, they bubbled on top and were light and crispy
