Crispy Potato Balls
These crispy potato balls turn mashed potatoes into golden bites with a crunchy crust and a soft center. Oregano, smoked paprika and parsley season the dough, while creamy Sriracha mayo brings a spicy finish.
There is no egg or breadcrumb coating to prepare. The trick is to start with well drained potatoes, roll a firm mixture and fry in small batches so each ball can develop its crust.
Why It Works
- A simple crust: Cornstarch binds the potato mixture and helps the outside crisp without a separate breading step.
- Flavor throughout: The herbs and spices go straight into the mash, so the centers taste as good as the crust.
- A dip you can adjust: Keep the Sriracha mayo bold and spicy, or add the hot sauce gradually for a milder version.
How To Make It
Boil, mash, roll and fry, then serve with the dip. Follow the photos for the sequence and use the recipe card for quantities, temperatures and full instructions.

Tips
- Cut before boiling: Peel and cut the potatoes into evenly sized chunks for faster, more even cooking. They should mash easily with a fork.
- Keep the mash dry: Drain thoroughly and let excess moisture steam off. Avoid adding milk, cream or butter, which can make this dough too soft.
- Mash by hand: A ricer, masher or fork removes lumps without overworking the potatoes. Skip the food processor, which can make the mixture gluey.
- Test one first: Fry a single ball before committing the whole batch. If it breaks apart, check that the oil is hot enough and the mixture is firm, then let the remaining balls cool and firm up.
- Give the crust time: Let the surface set before gently turning the balls. Crowding the pot or moving them too soon can damage the crust.
- Serve promptly: Drain in a single layer and keep the dip on the side. Stacking or covering freshly fried balls traps steam and softens them.
Swaps and Variations
- Fresh herbs: Chives or cilantro can replace the parsley. Pat washed herbs dry before chopping.
- A milder dip: Add Sriracha to the vegan mayo a little at a time. The original equal parts ratio is quite spicy, and brands vary in heat.
- A cheesy finish: Sprinkle with optional vegan Parmesan just before serving. This keeps the potato dough unchanged.
- Starch swaps: Cornstarch is the ingredient in this recipe. Potato starch is a possible alternative, and a reader reports success with arrowroot, but the texture may differ. Test a small batch rather than replacing the starch with wheat flour.
Serving Ideas
Serve hot with the Sriracha mayo, extra parsley and optional vegan Parmesan. Add crisp vegetables and pickles for a snack platter, or pair them with a salad for a simple lunch. For another snack with a creamy dip, try crispy air fryer gnocchi.
Frequently Asked Questions
Which potatoes work best?
A floury potato such as Russet is a good choice for a dry, fluffy mash. Yukon Gold can also work, but draining and steaming off moisture matter more than choosing by potato count alone. Use the total weight in the recipe as your guide.
Why are my potato balls falling apart?
A wet or very warm mixture, skipped starch, or rough handling before the crust sets can cause problems. Let the mash cool enough to handle, make smooth balls without cracks and test one in properly heated oil. If the mixture is still very sticky after cooling, work in a little more cornstarch gradually rather than adding a large amount at once.
Can I use flour instead of cornstarch?
A direct swap is not recommended here. A reader reported that the flour version separated in the oil, and flour changes the texture. Use cornstarch for this recipe, or test a small batch if trying another starch.
Can I use leftover or instant mashed potatoes?
Plain, firm mash is the closest match. Leftover mash made with plenty of milk, butter or cream can be too soft, and instant products vary. Keep the mixture dry, retain the cornstarch and test one ball before frying the rest.
Can I bake or air fry these?
This recipe is written for frying, and there is no tested oven or air fryer timing for this exact mixture. If you experiment, chill the shaped balls, lightly coat them with oil and try a small batch first. Expect a different crust and possibly a flatter shape.
Can I prepare them ahead?
Yes. Shape the balls, cover and refrigerate for up to 24 hours. Keep them in a single layer and use dry utensils when lowering them into the oil. Fry a test ball first, since chilled dough may need a little longer.
Are they vegan and gluten free?
The potato mixture contains no eggs, dairy or wheat. Use vegan mayonnaise and vegan Parmesan if adding the garnish. For a gluten free meal, check the labels on the cornstarch, sauces and seasonings, and use oil that has not fried foods containing gluten.
Can I freeze them?
Freezing is possible, but the texture and cooking time for this exact mixture have not been verified. Refrigerating shaped balls for up to 24 hours is the simpler make ahead option. Do not lower wet or ice coated balls into hot oil.
Storage
Refrigerate cooled leftovers in an airtight container for up to 3 days, with the dip in a separate container. Reheat the balls in an oven or air fryer until hot throughout and crisp again; the microwave warms them but softens the crust. Keep the Sriracha mayo refrigerated and follow the shortest storage guidance on the ingredients you use.

Method
- Boil the potatoes: Peel and cut the potatoes into even chunks for quicker cooking. Add to a pot of cold salted water, bring to a boil and simmer until easily pierced with a fork, about 12 to 15 minutes once boiling. Drain well and return to the warm pot off the heat for 1 to 2 minutes to let excess moisture steam off.
- Mash and season: Mash the potatoes thoroughly with a ricer, masher or fork until smooth. Mix in the cornstarch, oregano, garlic powder, onion powder, smoked paprika, cumin, parsley, salt and pepper. Let cool enough to handle; the mixture should be firm enough to roll.
- Form the balls: Scoop about 2 tablespoons of the mixture for each ball and roll gently into smooth, evenly sized balls. The number will depend on their size. If the dough is too soft to hold its shape, refrigerate briefly to firm it up and test one ball before frying the rest.
- Fry until golden: Heat 2 to 3 inches of neutral oil in a deep, heavy pot to 340°F (170°C), leaving plenty of room above the oil. Carefully lower in a small batch with a dry slotted spoon. Let a crust form before turning gently, then cook until golden and crisp, about 7 to 10 minutes depending on size. Maintain the temperature between batches. Drain on a rack or paper towels and season lightly while hot.
- Make the dip: Whisk the vegan mayonnaise with the Sriracha. The equal parts ratio makes a spicy sauce; for less heat, add the Sriracha gradually and stop when it tastes right to you.
- Serve: Serve the potato balls hot with extra parsley and the Sriracha mayo on the side. Add optional grated vegan Parmesan if desired.

Can you use white flour and get similar results?
White flour doesn’t work unfortunately. Potato starch is known for that perfect crunch when fried. I’d stick with it for the best results!
Could you do this with instant mashed potatoes?
I’m sure you could use instant flavored mashed potatoes like Betty Crocker just add the water gradually til everything is incorporated you don’t want a wet mixture..also add the cornstarch for the crunch.
Thanks for sharing that idea Brandy! Keeping the mash firm and testing one ball first would be a good approach😊
Hi Bri! It may work, but instant mash varies by brand. You would need a firm, fairly dry mash rather than a creamy one, so add the liquid cautiously and keep the cornstarch in the recipe. I would test-fry one ball first to check it holds together😊
Arrowroot is my preferred starch. I’d rather not have to mess around with wondering if my cornstarch is GMO or not, when the arrowroot works so much better anyway. If I were to run out of arrowroot, I would turn to potato starch for this recipe.
Thanks for sharing your starch swaps, Kimberly! Helpful to hear that arrowroot has worked well for you 😊
Tried to use flour but it was separating in the oil, then I added flaxseed for egg replacement since I didn’t have cornstarch, it was good
Thanks for sharing how you adapted it Christy! Glad you managed to bring it together and enjoyed the result😊
Greetings!
I’m wondering which type of potato you used for this recipe?
Thank you!
Hi Victoria! The recipe does not specify a variety, but a starchy potato such as a russet would be a good choice. Drain it well and let excess moisture steam off before mashing so the mixture holds together😊
Can you airfryer it
Hi Gloria! You can try an air fryer, though this recipe is written for frying and I do not have a tested air-fryer time. Lightly oil the balls, leave space between them and test a small batch first, as the crust and shape may turn out differently😊
Sehr lecker 🤤

These look great! Was wondering what the time/temp would be for an air-fryer?
Hi Samela! I don’t have a tested air fryer timing for these. If you’d like to experiment, chill the shaped balls, lightly coat with oil and cook a small batch at about 190°C/375°F, checking from 10 minutes and continuing until golden and hot throughout. Turn gently once they hold together. Expect a different crust from deep-frying 😊
Wow so adorable
Thank you Lucie! They are such a fun little snack😊
